Chunky Monkey Muffins !

Ingredients

3 Over ripe bananas mashed up

1 egg

1/3 Cup Veggie Oil

1/2 Granulated Sugar

1/4 Cup Brown Sugar

1 1/2 Cups AP Flour ( I like unbleached)

1 tsp Baking Powder

1/2 tsp Baking Soda

1/4 tsp salt

1 tsp Cinnamon

1/2 Cup Chocolate Chips

Shredded Coconut


Directions

Preheat your Oven to 375 degrees farenheit.

Step 1. Mash up your Bananas in a seperate bowl and set aside.

Step 2. Wisk together your Oil, Brown Sugar, Granulated Sugar and Egg until smooth.

Step 3. Add in your Flour, Baking Soda, Baking Powder, salt and Cinnamon mix until incorperated.

Step 4. Mix in the Bananas and Chocolate Chips.

Step 5. Top with enough shredded coconut the cover the muffins.

Step 6. Line and fill the Jumbo Muffin tin ( I use paper liners but if you don’t have them just make sure to spray your tin with a non stick spary)

*If you don’t have a Jumbo muffin tin use a regular one ( your cook time will just be a little less)

Step 7. Bake for 20-23 Minutes ( 12-16 minutes in a small tin) or until a tooth pick comes out clean.


Why I love this Recipe…

This is one of my favorite ways to use up those old gross bananas … you know the ones that have been sitting on your counter for the last two weeks. Sometimes you just don’t want banana bread …. AGAIN… so this is a fun way to spruce up those old bananas. Let me know what you guys think !! And Happy Baking !!
